Honestly, before you could even start this service you would need a reputation in the forums. No one will use a person that is relatively new.

1) What would you expect from me as a middleman?
Hate one of your clients or love one, the middleman should not pick a side. Just finish the deal with both customers. And keep the cash safe, and be active. That's what I'd like from a middleman.
2) What way should I prove to you that you can trust me?
U cant if u ask me, none can assure another is 110% trustworthy. Money can do strange things with people.
I've done several trades so far, but none of them wen't above 600euros. I've sold accounts and gave all of my clients what was theirs but when I've sold one of them I regretted it once, I could take it back also if it was a bad day. But I didn't, Tibia is an addiction, people do strange things when they are addicted and this counts for money to. A middleman could just run away with both. The account and the money. A well known and good reputation might help u tho.
3) How much will you be willing to pay max. for a middleman service?
I have no idea how much middleman's cost. I'd say 5 to 15 euro? (15euro should be a sick account then tho ^^)
4) Do you think a middleman should have his own site?
Don't really need your own site, a personal thread on the forums is enough I'd suppose!

To start Your own middleman's serivce, You should be around on the forum for quite longer time than just one month.
Gaining trust in many environments is very hard thing to do, I can assure You that is.
I am online almost everyday in Skype or MSN, talking with different people and helping as much as possible. Already did few good friendships with users around here, who can rely on my helping hand almost in everything what is legit.
So, to be a middleman You need to be known around for Your trustworthness, honesty and caring about people You want to cooperate with. Being a person with high reputation is not the dreamed position, it takes much amount of Your time.
Then I can only suggest You to think twice before applying for it, that's not a game but hard work :)

Apart from the whole "being trusty" aspect, which is the key part of being a middleman. You should wonder aswell if you would even want to be a middleman dealing with the risk that PayPal comes with. Personally I wouldn't be a middleman for people that I don't know when it comes to PayPal payments. At the end you are the one that might have to deal with the consequences of chargebacks.
