depends on if you bot or not / where you hunt
in that case i would stick to spellbook for sure!
I would use mms and magic level eq (probably gill set).
Hydras only have one physical attack so personally I would use the spellbook of vigilance. Regardless though, my thoughts about offense/defense will be written below the list of hydra attacks.
Hydra attacks:
- Melee (0-270)
- Earth Wave (65-320)
- Hot Water Wave (100-250)
- Ice Missile (70-155)
- Paralyze Bomb (on target) does ice damage
While hunting Behemoths, or any other creature that has a lot physical attacks, then sure, use a shield if you're scared about taking too much damage. I understand things differently though.. the higher your magic level is, the higher the amount of health restored per healing spell will be & the higher amount of damage dealt to creatures per offensive spell/rune will be. Ultimately, having more magic level results in gaining more experience quicker since the creatures are dying faster (and you'll probably waste less using a spellbook versus a shield since you're using less supplies killing the creatures / healing yourself due having the increased higher magic level anyways).
Take a look at http://tibia.wikia.com/wiki/Formulae#Armor_and_Defense if you're more interested in actual formulas (scroll down to the Armor and Defense section). You can do the math and compare between the mastermind shield / the spellbook of vigilance and come to a conclusion that best suits you. I'm sorry, I'm too tired to do the calculations for you tonight but once again, I'd go for more magic level since more experience/hour means you're leveling faster and all of this becomes less of an issue as your character gets stronger.
I hope this makes sense and I apologize for the long read. Someone once told me about 15 years ago that the only thing that matters while hunting is your damage, increase your damage and you'll gain levels faster. The higher level you are, the easier things become. I have a lot of friends that don't even worry about elemental resistances anymore, they'll take the gear that gives them the most magic level.. even if it means they'll be taking more damage in Hellfire Fighters because they're wearing gill legs, just because the legs provide +1 magic level.
EDIT: I went ahead and did the calculations for you, based on if the shield/spellbook were the only items you were wearing (no other defense/offense gear equipped).
Mastermind Shield:
Average damage: 270-37(10*e/100)-(270/100)*c = 233
Sudden Death:
(based on magic level 70, mastermind shield)
Max damage: (lvl*0.2)+(mlvl*7.395)+46 = 593.65
Min damage: (lvl*0.2)+(mlvl*4.605)+28 = 380.35
Spellbook of Vigilance:
Average damage: 270-20(10*e/100)-(270/100)*c = average damage = 250
Sudden Death:
(based on magic level 70 + 3, spellbook of vigilance)
Max damage: (lvl*0.2)+(mlvl*7.395)+46 = 615.84
Min damage: (lvl*0.2)+(mlvl*4.605)+28 = 394.17
- C = Total Armor
- E = Defense Factor (full attack: 5, balanced: 7, defensive: 10)
Now you just need to decide if preventing 17 points of damage on average while using a mastermind shield is better than dealing 18 more points of damage on average + whatever the increase is for average healing while using a spellbook of vigilance. If hydras were weak to death, the scale would be even more lopsided towards using a spellbook of vigilance than it already is. Back to the top, more damage equates to gaining more experience faster which results in gaining more levels in less time which makes it easier to hunt there which then makes it even more profitable.
I'd love to hear if anyone else has some ideas concerning the use of shields / spellbooks.. and again, I'm sorry its a lot to read, I'm sure not even one person will read it. :D

I mainly bot tankmode on my ED, meaning I stand around with 6-7-8 creatures, therefor spellbook is the obvious choice since my shield would break anyway, and now at least I got the % bonus from it.
Otherwise I often go Nightmare Shield on level up to 200, just since the HP on a mage isn't too great and I rather play it safe than rollercoast-heal more/dmg more at this level. From 200 though roughly I tend to use the spellbooks.
